Description

This Easy Chicken Cobbler is a warm, comforting bake filled with creamy chicken and veggies, topped with a fluffy biscuit crust. Perfect for busy weeknights or lazy weekends, it uses simple ingredients and comes together in one dish with minimal prep.


Ingredients

2 cups cooked shredded chicken

1 cup frozen mixed vegetables thawed

1/2 cup chopped onion (optional)

1 can (10.5 oz) cream of chicken soup

1/2 cup chicken broth

1/2 teaspoon garlic powder

1/2 teaspoon black pepper

1/4 teaspoon dried thyme (optional)

1 cup biscuit mix

1/2 cup milk

2 tablespoons melted butter


Instructions

1. Preheat your oven to 375°F (190°C).

2. In a medium bowl, mix the shredded chicken, thawed vegetables, onion, soup, broth, garlic powder, black pepper, and thyme.

3. Pour the mixture into a greased 9×9 inch baking dish and spread it evenly.

4. In another bowl, combine the biscuit mix, milk, and melted butter until just mixed.

5. Spoon the batter over the chicken filling without stirring.

6. Bake uncovered for 35–40 minutes until golden and cooked through.

7. Let it sit for 5 minutes before serving.

Notes

Use rotisserie chicken to save prep time.

You can swap in fresh veggies if desired—just cook them slightly first.

Add cheddar cheese to the biscuit mix for a cheesy twist.
