Description

This Easy Chicken Lo Mein is your answer to quick, flavorful weeknight dinners. Tender chicken, crisp vegetables, and chewy noodles are tossed in a savory, garlicky sauce for a takeout-style meal in under 30 minutes.


Ingredients

1 lb boneless skinless chicken breast, thinly sliced

8 oz lo mein noodles or spaghetti

2 tbsp vegetable oil, divided

1 cup shredded carrots

1 red bell pepper, thinly sliced

1 cup snow peas or sugar snap peas

3 green onions, chopped

2 cloves garlic, minced

1/4 cup low sodium soy sauce

2 tbsp oyster sauce

1 tbsp hoisin sauce

1 tbsp sesame oil

1 tbsp brown sugar

1/4 tsp ground ginger


Instructions

1. In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, sesame oil, brown sugar, and ground ginger. Set aside.

2. Boil lo mein noodles or spaghetti according to package instructions until just al dente. Drain, rinse with cold water, and toss with a bit of oil to prevent sticking.

3. Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add chicken and cook until golden and cooked through, about 4-5 minutes. Remove and set aside.

4. Add remaining oil to the pan. Sauté garlic, carrots, bell pepper, and snow peas for 3-4 minutes until crisp-tender.

5. Return chicken to the pan, add noodles and sauce. Toss everything to coat and heat through, about 2 minutes. Top with green onions and serve.

Notes

Use fresh egg noodles if available for a more authentic texture.

Add chili flakes or sriracha for a spicy kick.

Don’t overcook the noodles—they’ll soften further in the sauce.
