1/4 teaspoon dried thyme
1 egg, beaten
1 tablespoon Dijon mustard (optional)
Salt and pepper to taste
Instructions
1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Roll out the puff pastry on a lightly floured surface to even it out.
3. In a bowl, mix sausage, sage, thyme, salt, and pepper.
4. If using, spread Dijon mustard over the pastry.
5. Place the sausage in a log along one edge and roll the pastry tightly over it.
6. Seal the edge with a bit of egg wash and cut into 6-8 pieces.
7. Place pieces seam-side down on the sheet and brush tops with egg.
8. Bake for 20-25 minutes until golden brown.
9. Let cool slightly before serving.
Notes
For extra flavor, use an all-butter puff pastry.
