Ingredients
1.5 lbs boneless skinless chicken breasts or thighs
3 tablespoons olive oil
1/4 cup lemon juice (juice of 2 lemons)
Zest of 1 lemon
4 garlic cloves minced
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
Fresh parsley and lemon slices for garnish (optional)
Instructions
1. In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, salt, and pepper.
2. Add the chicken and toss to coat. Marinate in the fridge for at least 20 minutes, up to 4 hours.
3. Heat a large skillet over medium-high heat. Add oil if needed and place chicken in a single layer.

5. Remove from heat and let the chicken rest for a few minutes.

Notes
