These Easy Fluffy Cinnamon Roll Pancakes taste just like your favorite bakery treat but in pancake form. Swirled with buttery cinnamon and topped with a drizzle of cream cheese glaze, they’re perfect for a weekend brunch or cozy weekday breakfast.
Ingredients
1 ½ cups all-purpose flour
3 tablespoons sugar
1 tablespoon baking powder
½ teaspoon salt
1 ¼ cups milk
1 large egg
3 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
¼ cup unsalted butter, melted
½ cup packed light brown sugar
1 ½ teaspoons ground cinnamon
2 tablespoons cream cheese, softened
¼ cup powdered sugar
1 tablespoon milk
¼ teaspoon vanilla extract
Instructions
1. In a small bowl, stir together melted butter, brown sugar, and cinnamon until smooth. Transfer to a zip-top bag or piping bag.
2. In another bowl, whisk cream cheese, powdered sugar, milk, and vanilla until smooth. Adjust milk to reach drizzling consistency.
3. In a large bowl, whisk together flour, sugar, baking powder, and salt. In a separate bowl, mix milk, egg, butter, and vanilla. Combine wet and dry ingredients until just blended.
4. Preheat a skillet or griddle over medium heat. Lightly grease. Pour ¼ cup of batter for each pancake. Once bubbles form, swirl in the cinnamon mixture. Flip and cook until golden.
5. Stack pancakes and drizzle with glaze. Serve warm.
Notes
Make sure your pancake batter is thick enough to hold the swirl.
Keep the skillet at medium heat to avoid burning the swirl.
Let pancakes cool before freezing to avoid sogginess during reheating.
