Easy Garlic-Parmesan Chicken Bites with Sun-Dried Tomato Cajun Alfredo and Charred Broccolini is a creamy, spicy, flavor-packed chicken dinner recipe. Ingredients

1 ½ pounds boneless skinless chicken thighs

4 garlic cloves, minced

½ cup grated Parmesan cheese

2 tablespoons olive oil

2 tablespoons butter

1 ¼ cups heavy cream

½ cup sun-dried tomatoes, chopped

1 tablespoon Cajun seasoning

1 bunch broccolini

½ teaspoon salt

¼ teaspoon black pepper

2 tablespoons chopped fresh parsley (optional)


Instructions

1. Cut chicken into bite-sized pieces and season with salt, pepper, and half of the Cajun seasoning.

2. Heat olive oil in a skillet over medium-high heat. Sear chicken until golden and fully cooked. Remove from pan.

3. In the same pan, melt butter and sauté garlic until fragrant.

4. Add heavy cream, remaining Cajun seasoning, and sun-dried tomatoes. Simmer gently until slightly thickened.

5. Stir in Parmesan cheese until sauce is smooth. Return chicken to the pan and coat evenly.

6. In a separate pan, toss broccolini with olive oil, salt, and pepper. Char on high heat until tender and slightly crisp.

7. Plate the chicken bites with creamy sauce and charred broccolini. Top with parsley if desired.

Notes

Be careful not to boil the cream or the sauce may break.

Don’t overcook the chicken since bite-sized pieces cook fast.

Char the broccolini at high heat for the best texture and flavor.
