This easy grilled salmon is topped with a vibrant, juicy mango salsa that brings tropical flair to your plate. With bold spices, zesty lime, and a touch of heat, it’s a delicious, healthy meal that’s quick enough for weeknights and fancy enough for weekends.
Ingredients
4 salmon fillets (6 oz each)
1 tablespoon olive oil
1 teaspoon paprika
1/2 teaspoon garlic powder
salt and black pepper to taste
juice of 1 lime
2 ripe mangoes, peeled and diced
1/2 red bell pepper, diced
1/4 cup red onion, finely chopped
1 small jalapeño, seeded and minced
juice of 1 lime
2 tablespoons fresh cilantro, chopped
salt to taste
Instructions
1. In a bowl, mix mangoes, bell pepper, red onion, jalapeño, lime juice, and cilantro with a pinch of salt. Chill salsa in fridge.
2. Pat salmon dry, rub with olive oil, season with paprika, garlic powder, salt, pepper, and lime juice.
3. Preheat grill or grill pan to medium-high. Grill salmon skin-side down for 4–5 minutes per side until flaky.
4. Plate the salmon and spoon mango salsa over the top. Garnish with lime wedges and extra cilantro if desired.
Notes
For best results, use ripe mangoes that are slightly soft to the touch.
Make sure your grill is preheated to avoid sticking.
Salsa can be made up to 1 day ahead for deeper flavor.
