A hearty and comforting one-skillet meal made with ground beef, tender potatoes, and savory seasoning. Perfect for a quick weeknight dinner, this easy ground beef potato recipe comes together fast and feeds the whole family with little cleanup.
Ingredients
1 lb ground beef
4 medium Yukon Gold potatoes, diced
1 small onion, chopped
2 cloves garlic, minced
1 tsp smoked paprika
1 tsp dried oregano
Salt and pepper to taste
2 tbsp olive oil
0.5 cup beef broth (or water)
Fresh parsley, chopped (optional, for garnish)
Instructions
1. In a large skillet over medium heat, cook the ground beef until browned and no longer pink. Drain excess fat if needed, then set aside.
2. In the same skillet, add olive oil, chopped onion, and garlic. Cook until the onion is translucent and fragrant, about 3-4 minutes.
3. Stir in the diced potatoes, smoked paprika, oregano, salt, and pepper. Mix well to coat the potatoes evenly with the seasonings.
4. Return the cooked ground beef to the skillet. Pour in the beef broth, then cover and let simmer for 15-20 minutes, stirring occasionally, until the potatoes are fork-tender.
5. Remove the lid and cook uncovered for another 5 minutes to let any extra liquid evaporate and the edges crisp slightly. Garnish with fresh parsley before serving.
Notes
Keep potato chunks evenly sized so they cook at the same rate.
For extra flavor, add shredded cheese during the last 5 minutes of cooking.
This dish is easily doubled, but use a wider pan to avoid overcrowding.
