Description

This Easy Homemade Jambalaya is a one-pot Southern classic, bursting with smoky sausage, tender chicken, and aromatic Cajun spices. It’s hearty, satisfying, and perfect for weeknight dinners or feeding a hungry crowd. With just one pot and pantry staples, you’ll have a flavor-packed dish on the table in under an hour.


Ingredients

1 tablespoon olive oil

1 pound boneless skinless chicken thighs, cut into 1-inch pieces

12 ounces andouille sausage, sliced

1 small onion, diced

1 green bell pepper, diced

2 celery stalks, chopped

3 garlic cloves, minced

1 can (14.5-ounce) diced tomatoes, with juices

1 cup long-grain white rice

2 cups chicken broth

2 teaspoons Cajun seasoning

1/2 teaspoon dried thyme

1/2 teaspoon paprika

Salt and pepper to taste

Chopped green onions and parsley for garnish


Instructions

1. Heat olive oil in a large pot over medium-high heat. Add chicken, season with salt and pepper, and brown until cooked through. Remove and set aside.

2. Add sausage to the pot and cook until caramelized. Remove and set aside with the chicken.

3. Add onion, bell pepper, and celery to the pot. Cook for 5 minutes until softened. Stir in garlic and cook 1 minute.

4. Return meat to the pot. Stir in diced tomatoes, Cajun seasoning, thyme, and paprika. Cook for 2 minutes.

5. Add rice and chicken broth. Bring to a boil, then reduce to low, cover, and simmer 20–25 minutes until rice is tender and liquid is absorbed.

6. Fluff with a fork, adjust seasoning, and garnish with green onions and parsley.

Notes

This dish gets better the next day—great for leftovers.

Use smoked sausage if andouille is unavailable.

For seafood lovers, toss in raw shrimp during the last 5 minutes of simmering.
