A cozy, nutritious, and easy-to-make lentil soup made with simple ingredients and warm spices. Perfect for a meatless dinner or weekly meal prep.
Ingredients
2 tablespoons olive oil
1 medium yellow onion, chopped
2 carrots, peeled and diced
2 celery stalks, diced
3 garlic cloves, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon smoked paprika
1/4 teaspoon red pepper flakes (optional)
1 1/2 cups green or brown lentils, rinsed
1 14.5-ounce can diced tomatoes
6 cups vegetable broth
1 bay leaf
Salt and pepper, to taste
1 tablespoon lemon juice (optional)
Fresh parsley, chopped, for garnish
Instructions
1. Heat olive oil in a large pot over medium heat. Add chopped onion, carrots, and celery. Cook for 7-8 minutes until softened.
2. Stir in garlic, cumin, coriander, paprika, and red pepper flakes. Sauté for 1-2 minutes until fragrant.
3. Add lentils, diced tomatoes, broth, and bay leaf. Bring to a boil, then reduce heat and simmer for 30-35 minutes.
4. Remove bay leaf. Season with salt and pepper. Stir in lemon juice if using. Optionally blend part of the soup for a creamier texture.
5. Serve hot, garnished with parsley, with bread or over rice.
Notes
Use green or brown lentils for a firm texture.
Add greens like spinach or kale for extra nutrients.
For a creamier soup, blend half with an immersion blender.
