Ingredients
1 pound ground beef (80/20)
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup chopped parsley
1 large egg
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon onion powder
1/2 teaspoon dried oregano
1/4 cup milk
2 tablespoons olive oil (for frying, optional)
Instructions
1. In a large bowl, combine ground beef, breadcrumbs, Parmesan, parsley, egg, garlic, salt, pepper, onion powder, oregano, and milk. Mix just until combined.
2. Roll the mixture into 1 1/2 tablespoon-sized balls (about 18 meatballs).
3. To pan-fry: Heat olive oil in a skillet over medium heat. Cook meatballs until browned and cooked through, about 10 minutes.
4. To bake: Preheat oven to 400°F (200°C). Arrange meatballs on a baking sheet and bake for 18-20 minutes.
5. Serve with sauce or store for later.

Let the meatball mix rest 5 minutes before rolling for better binding.
