Description

Easy one-pan lemon butter chicken with asparagus is a quick, flavorful dinner featuring juicy chicken, tender asparagus, and a rich lemon butter sauce. Perfect for a weeknight meal, ready in 30 minutes.


Ingredients

2 large chicken breasts or thighs

1 bunch asparagus, trimmed

3 tablespoons butter

3 cloves garlic, minced

1 lemon, juiced and zested

1/2 cup chicken broth

Salt and pepper, to taste


Instructions

1. Heat a large skillet over medium-high heat and melt 1 tablespoon of butter with a drizzle of oil. Season chicken with salt and pepper, then sear each side for 5–6 minutes until golden and cooked through. Remove from skillet and set aside.

2. Lower heat to medium, add remaining butter and minced garlic. Sauté until fragrant, about 30 seconds.

3. Pour in chicken broth, lemon juice and zest. Scrape up browned bits and simmer a few minutes to reduce slightly.

4. Add asparagus and cook 3–4 minutes until tender-crisp, turning to coat in sauce.

5. Return chicken to skillet, spoon sauce over, heat through, and serve.

Notes

Pound chicken to even thickness for even cooking.

Don’t overcrowd the pan for a proper sear.

Use fresh lemon juice for best flavor.
