1/2 tsp paprika
1/4 tsp garlic powder
Salt and pepper, to taste
1 ripe avocado
1/2 cup sour cream or Greek yogurt
Juice of 1 lime
1 clove garlic, minced
1 tbsp fresh cilantro
Pinch of salt
8 small corn or flour tortillas
1 cup shredded cabbage or slaw mix
1/4 cup diced red onion
1/4 cup chopped cilantro
Lime wedges, for serving
Instructions
1. In a bowl, toss the shrimp with olive oil, chili powder, cumin, paprika, garlic powder, salt, and pepper until evenly coated.
2. Heat a large skillet over medium-high heat and cook the shrimp for 2–3 minutes per side, until pink and opaque. Set aside.
3. In a food processor or blender, combine the avocado, sour cream or yogurt, lime juice, garlic, cilantro, and salt. Blend until smooth. Add water to thin if needed.
4. Warm tortillas in a skillet or microwave until soft.
5. Spread avocado crema on each tortilla, add shredded cabbage, shrimp, red onion, and cilantro. Serve with lime wedges.
Notes
For extra flavor, marinate the shrimp for 15 minutes before cooking.
Keep the avocado crema green longer by pressing plastic wrap directly onto the surface.
To make this dairy-free, use plant-based yogurt in the crema.
