Ingredients
1 cup unsalted butter, softened
0.75 cup brown sugar, packed
0.5 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1.5 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
0.25 teaspoon nutmeg
0.5 teaspoon salt
3 cups old-fashioned rolled oats
0.5 cup unsalted butter, softened
2 cups powdered sugar
0.25 cup eggnog
0.25 teaspoon nutmeg
0.5 teaspoon vanilla extract
Instructions
1. Beat the softened butter with both sugars until light and fluffy, about 2–3 minutes with a mixer.
2. Add eggs one at a time, then vanilla, and beat until fully combined.
3. In another bowl, whisk flour, baking soda, cinnamon, nutmeg, and salt. Gradually add to the wet mixture.
4. Stir in rolled oats by hand until fully incorporated.
5. Preheat oven to 350°F (175°C). Drop dough by tablespoon onto parchment-lined baking sheets. Bake 10–12 minutes. Cool completely.
6. For the filling, beat butter until creamy. Add powdered sugar gradually, then eggnog, nutmeg, and vanilla. Beat until fluffy.
7. Pipe or spread filling onto one cookie, top with another. Repeat until all are sandwiched.
Notes
Chill dough for thicker cookies, if desired.
Let buttercream set for 10 minutes before assembling for neater pies.
Use a piping bag for easier, cleaner filling.
