Description

Easy Spinach & Cottage Cheese Breakfast Casserole is a warm, protein-packed breakfast made with eggs, creamy cottage cheese, tender spinach, and melty cheddar. It bakes into a soft, satisfying casserole that works beautifully for brunch, meal prep, or a simple make-ahead breakfast during the week.


Ingredients

8 large eggs

1 cup cottage cheese

2 cups fresh spinach, chopped

1 cup shredded cheddar cheese

1/4 cup grated Parmesan cheese

1/4 cup milk

1/4 cup onion, finely diced

1 tablespoon olive oil

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes, optional

nonstick cooking spray for the baking dish


Instructions

1. Preheat your oven to 375°F and lightly grease an 8×8-inch baking dish.

2. Heat the olive oil in a skillet over medium heat, then cook the onion for 2 to 3 minutes until softened.

3. Add the chopped spinach and cook for 1 to 2 minutes until just wilted, then remove from the heat.

4. In a large bowl, whisk together the eggs, cottage cheese, milk, garlic powder, salt, black pepper, and red pepper flakes if using.

5. Stir in the cooked onion and spinach mixture, then add the cheddar and Parmesan cheese.

6. Pour the mixture into the prepared baking dish and spread it evenly.

7. Bake for 30 to 35 minutes, or until the center is set and the top is lightly golden.

8. Let the casserole rest for 5 to 10 minutes before slicing and serving.

Notes

Drain excess moisture from the spinach if needed so the casserole stays firm and not watery.
