Description

This Easy Stuffed Pepper Casserole brings all the comforting flavors of classic stuffed peppers in a no-fuss casserole format. With tender rice, sweet bell peppers, savory ground beef, and melty cheese, it’s perfect for weeknights and easy to make ahead or freeze for later.


Ingredients

1 lb ground beef

1 tablespoon olive oil

1 cup chopped onion

2 cloves garlic, minced

2 cups chopped bell peppers

1 teaspoon Italian seasoning

1/2 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 can (14.5 oz) diced tomatoes

1 can (8 oz) tomato sauce

1 cup cooked rice

1 1/2 cups shredded cheddar or mozzarella cheese

Fresh parsley, chopped (optional)


Instructions

1. In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.

2. In the same skillet, heat olive oil and sauté chopped onion until soft. Add garlic and cook for 1 minute.

3. Add chopped bell peppers and cook until slightly tender.

4. Return the beef to the skillet. Stir in diced tomatoes, tomato sauce, Italian seasoning, paprika, salt, and pepper. Simmer for 5-7 minutes.

5. Stir in cooked rice until everything is combined.

6. Transfer mixture to a greased baking dish. Top with shredded cheese.

7. Bake at 375°F for 15-20 minutes, until cheese is bubbly.

8. Garnish with chopped parsley and serve warm.

Notes

You can use ground turkey or chicken as a substitute for beef.

To save time, use microwave-ready rice packs.

Let casserole sit for 5 minutes after baking to set before serving.
