Description

This Easy Tuscan Garlic Chicken Bites & Sun-Dried Tomato Cajun Alfredo Pasta recipe is a creamy, spicy one-skillet dinner packed with flavor. Featuring tender garlic chicken, sun-dried tomatoes, Cajun Alfredo sauce, and pasta, it’s the ultimate comfort food for any pasta lover. Perfect for weeknights, meal prep, or sharing with friends.


Ingredients

1 lb boneless skinless chicken thighs

2 tbsp olive oil

4 garlic cloves, minced

1/3 cup sun-dried tomatoes, chopped

1 tbsp Cajun seasoning

1 1/2 cups heavy cream

3/4 cup grated Parmesan cheese

10 oz pasta (penne, fettuccine, or rotini)

1/2 tsp salt

1/2 tsp black pepper

1 tbsp butter

2 tbsp chopped fresh basil or parsley (optional)


Instructions

1. Cut chicken thighs into bite-sized pieces. Season with Cajun seasoning, salt, and pepper.

2. Heat olive oil in a skillet over medium-high. Sear chicken until golden and cooked through. Remove and set aside.

3. In the same skillet, melt butter. Add minced garlic and sauté for 30 seconds. Stir in chopped sun-dried tomatoes and cook 1 more minute.

4. Reduce heat to medium. Pour in heavy cream and stir to combine. Let it simmer gently.

5. Add Parmesan cheese and stir continuously until sauce thickens and becomes creamy.

6. Cook pasta in salted boiling water according to package instructions. Drain, reserving 1/2 cup of pasta water.

7. Return chicken to the skillet with the sauce. Add pasta and a splash of pasta water. Toss everything until well combined.

8. Top with chopped basil or parsley and serve hot.

Notes

This recipe works great with shrimp or rotisserie chicken.

Don’t let the cream come to a boil—gentle simmer is key for a smooth sauce.

Use freshly grated Parmesan for the best texture and flavor.
