Ingredients
1 ½ cups graham cracker crumbs
¼ cup granulated sugar
½ cup unsalted butter, melted
24 oz cream cheese, softened
1 cup granulated sugar
3 tablespoons all-purpose flour
¾ cup eggnog
2 teaspoons rum extract or 1 tablespoon dark rum
½ teaspoon ground nutmeg
3 large eggs
Whipped cream and extra nutmeg or cinnamon for topping (optional)
Instructions
1. Preheat oven to 325°F (163°C). Combine graham cracker crumbs, sugar, and melted butter in a bowl. Press firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes and let cool.
2. Beat cream cheese until smooth. Add sugar and flour; mix well. Gradually beat in eggnog, rum extract, and nutmeg.
3. Add eggs one at a time, mixing just until blended.
4. Pour filling over crust. Bake for 50–60 minutes until center is almost set but slightly jiggly.
5. Turn off oven, crack the door, and let cheesecake sit inside for 1 hour.
6. Cool to room temperature, then refrigerate for at least 4 hours or overnight.
7. Top with whipped cream and a sprinkle of nutmeg or cinnamon before serving.
