Description

A sophisticated, show-stopping dessert with creamy mascarpone mousse set on a soft chocolate sponge, finished with a glossy mirror glaze. Perfect for special occasions when you want to impress.


Ingredients

1/2 cup all-purpose flour

1/4 cup cocoa powder

1/2 teaspoon baking powder

2 large eggs

1/2 cup granulated sugar

2 tablespoons milk

1 tablespoon vegetable oil

1 teaspoon vanilla extract

1 cup heavy cream

1/2 cup mascarpone cheese

1/3 cup powdered sugar

1/2 teaspoon vanilla bean paste or extract

1 1/2 teaspoons gelatin powder

2 tablespoons water

3/4 cup semi-sweet chocolate, chopped

1/2 cup water

1/2 cup granulated sugar (for glaze)

1/4 cup heavy cream (for glaze)


Instructions

1. Preheat oven to 350°F (175°C). Sift flour, cocoa powder, and baking powder together.

2. Beat eggs and sugar until pale and fluffy. Gently fold in the dry ingredients.

3. Add milk, oil, and vanilla. Pour into lined tray and bake 10–12 minutes. Cool completely.

4. Bloom gelatin in 2 tbsp cold water. Whip cream to soft peaks.

5. In another bowl, mix mascarpone, powdered sugar, and vanilla. Fold in whipped cream.

6. Melt gelatin and fold it into mousse. Spoon mousse into dome molds. Chill 30 mins.

7. Cut sponge discs to fit dome bases. Place discs on chilled mousse.

8. Freeze molds for 4 hours or until solid.

9. For glaze: Bloom gelatin. Heat water, sugar, and cream until boiling.

10. Remove from heat and add chopped chocolate. Stir until smooth.

11. Add melted gelatin. Cool glaze to 90°F (32°C).

12. Unmold domes. Pour glaze over each dome. Chill 1 hour before serving.

Notes

Always glaze domes while frozen for a flawless finish.

Use vanilla bean paste for richer aroma and flavor.

Let glaze cool to 90°F before using to avoid melting the mousse.
