Ingredients
8 slices brioche or challah bread
3 large eggs
3/4 cup milk
1/2 cup pumpkin puree
2 tablespoons brown sugar
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
Pinch salt
2 tablespoons butter for cooking
1/4 cup maple syrup for serving
2 tablespoons powdered sugar optional garnish
Instructions
1. Whisk together eggs, milk, pumpkin puree, brown sugar, vanilla, cinnamon, nutmeg, ginger, and salt until smooth.
2. Dip each slice of bread into the pumpkin mixture, coating both sides without oversoaking.
3. Heat a skillet over medium heat and melt butter.
4. Place soaked bread onto the skillet and cook 3 to 4 minutes per side until golden brown.
5. Transfer cooked slices to a warm oven while finishing remaining bread.
6. Serve warm with maple syrup and optional powdered sugar or toppings.
Notes
Use slightly stale bread so it absorbs custard without falling apart.
Cook over medium heat so the inside cooks through before the outside browns too fast.
Whisk custard again between batches since pumpkin can settle.
