Ingredients
1 lb ground beef
1/2 yellow onion, diced
1 clove garlic, minced
1 small head green cabbage, chopped
1 tsp smoked paprika
1/2 tsp cumin
Salt and pepper, to taste
1 cup shredded cheddar cheese
2 cups Fritos corn chips
Optional toppings: sour cream, jalapeños, green onions
Instructions
1. In a large skillet over medium heat, cook the ground beef until browned, breaking it apart as it cooks. Drain excess fat if needed.
2. Stir in the diced onion and garlic. Sauté for 3–4 minutes until translucent and fragrant.
3. Add chopped cabbage, smoked paprika, cumin, salt, and pepper. Cook for 8–10 minutes until cabbage softens and caramelizes slightly.
4. Sprinkle cheddar cheese over the mixture. Cover with a lid for 2–3 minutes to melt the cheese.
5. Remove from heat, top with Fritos, and serve hot with your favorite toppings.
Notes
Swap ground beef for turkey or chicken to lighten the dish.
Add jalapeños or cayenne for a spicier version.
Store leftovers without Fritos and re-top when reheating for best crunch.
