Ingredients
1 cup unsalted butter, softened
1 cup light brown sugar, packed
1/2 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups chopped pecans, toasted
1/4 cup unsalted butter (for frosting)
2 cups powdered sugar
1/4 cup milk
1/2 teaspoon vanilla extract (for frosting)
Instructions
1. Cream the butter, brown sugar, and granulated sugar until light and fluffy.
2. Beat in eggs one at a time, then add vanilla.
3. In a separate bowl, whisk together flour, baking soda, and salt.
4. Gradually mix dry ingredients into the wet mixture.
5. Fold in toasted chopped pecans.
6. Preheat oven to 350°F (175°C). Line baking sheets with parchment.
7. Scoop dough (1.5 tbsp per cookie) and bake for 10–12 minutes. Let cool.
8. For frosting, melt butter. Stir in powdered sugar, milk, and vanilla until smooth.
9. Frost cooled cookies and allow glaze to set.
Notes
Toast the pecans beforehand for maximum flavor.
Let cookies cool completely before frosting.
Store in a single layer or use parchment to separate layers.
