Ingredients
12 frozen chicken taquitos (1 box, 20 oz)
10 oz red enchilada sauce (1 can)
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
0.5 cup sour cream (for topping)
0.5 cup chopped green onions
0.5 cup chopped cilantro
0.25 cup sliced black olives (optional)
1 avocado, diced (optional)
Instructions
1. Preheat oven to 400°F. Spray a 9×13-inch baking dish with nonstick cooking spray.
2. Arrange frozen taquitos in a single layer in the dish.
3. Pour enchilada sauce evenly over taquitos.
4. Sprinkle both cheeses generously on top.
5. Cover with foil and bake for 20 minutes.
6. Remove foil and bake another 10 minutes until cheese is melted and bubbly.
7. Cool slightly, then top with sour cream, green onions, cilantro, olives, and avocado if using.
8. Serve hot with your favorite sides.
Notes
You can use beef, cheese, or vegetarian taquitos if preferred.
For a spicier version, choose hot enchilada sauce or add jalapeños.
Bake uncovered for the last 10 minutes to help crisp the edges.
