Ingredients
2 chicken breasts
12 oz penne pasta
4 cloves garlic, minced
4 tbsp butter
4 oz cream cheese
1 cup shredded mozzarella cheese
1/2 cup grated parmesan cheese
1 cup heavy cream
1/2 tsp salt
1/2 tsp black pepper
1 tbsp olive oil
1 tsp Italian seasoning
Instructions
1. Season diced chicken with salt, pepper, and Italian seasoning. Heat olive oil in a large skillet over medium heat and sear the chicken until golden and cooked through. Set aside.
2. In the same skillet, melt the butter and add minced garlic. Sauté for about 1 minute until fragrant.
3. Add the cream cheese to the skillet and stir until it starts to melt. Pour in the heavy cream, whisking to combine into a smooth sauce.
4. Add mozzarella and parmesan to the sauce and stir until fully melted and creamy.
5. Meanwhile, cook penne pasta in salted boiling water according to package instructions. Reserve 1/2 cup of pasta water and drain.
6. Add the chicken and pasta to the skillet with the sauce. Toss to coat everything evenly, using reserved pasta water if needed.
7. Serve hot with extra parmesan and herbs if desired.
