Ingredients
2 boneless, skinless chicken breasts
2 tablespoons salted butter
3 garlic cloves, minced
1 cup freshly grated parmesan cheese
1 cup heavy cream
8 ounces linguine pasta
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Season chicken breasts with salt and pepper.
2. Heat olive oil in a skillet over medium-high heat. Sear chicken until golden and cooked through, about 6-7 minutes per side. Remove and rest.
3. Bring a large pot of salted water to boil. Cook linguine until al dente. Drain and reserve 1/2 cup pasta water.
4. In the skillet, reduce heat to medium-low, melt butter, and add garlic. Cook until fragrant, about 1 minute.
5. Pour in cream and bring to a gentle simmer.
6. Gradually stir in parmesan cheese, allowing it to melt and thicken the sauce. Add pasta water if needed to loosen the sauce.
7. Slice rested chicken.
8. Toss cooked linguine in sauce until fully coated.
9. Plate and top with sliced chicken. Garnish with extra parmesan and black pepper.
Notes
Use freshly grated parmesan for best melt and flavor.
Don’t skip resting the chicken for juicy, tender slices.
Add a splash of pasta water to help bind the sauce to the pasta.
