Ingredients
1 lb shrimp, peeled and deveined
3 tbsp butter
4 cloves garlic, minced
1 lemon, juice and zest
1/2 cup heavy cream
1 cup white rice
2 cups chicken broth
2 tbsp fresh parsley, chopped
1 tbsp chives, chopped
1 tsp salt
1/2 tsp black pepper
1 tbsp olive oil
Instructions
1. Cook white rice in chicken broth over medium heat until liquid is mostly absorbed.
2. Stir in heavy cream, parsley, and chives. Simmer until creamy. Cover and keep warm.
3. Heat olive oil and 1 tbsp butter in a skillet. Add shrimp, season with salt and pepper. Cook 1–2 minutes per side.
4. Remove shrimp. Add remaining butter and garlic to the skillet. Sauté until fragrant.
5. Add lemon juice and zest. Return shrimp to pan, coat with garlic butter sauce. Heat for 1 minute.
6. Spoon creamy herb rice into bowls. Top with garlic butter shrimp and extra herbs. Serve warm.
Notes
Use chicken broth instead of water for more flavor in the rice.
Don’t overcook the shrimp; they turn rubbery fast.
Add a splash of white wine to the garlic butter for extra depth.
