Ingredients
1 lb chicken breast or thighs
4 garlic cloves, minced
1/4 cup soy sauce
2 tablespoons brown sugar
1 tablespoon cornstarch
2 tablespoons vegetable oil
1 red bell pepper, sliced
1 cup broccoli florets
1 carrot, thinly sliced
2 green onions, chopped
3 cups cooked white rice
Instructions
1. Slice chicken thinly, mince garlic, and chop vegetables into bite-sized pieces.
2. In a bowl, mix soy sauce, brown sugar, garlic, and cornstarch. Add chicken and marinate for 10–15 minutes.
3. Heat oil in a skillet over medium-high. Cook chicken until golden and cooked through. Remove and set aside.
4. Add more oil if needed. Stir-fry carrots, bell peppers, and broccoli for 4–5 minutes until crisp-tender.
5. Return chicken to skillet, add green onions, and any remaining marinade. Stir well and simmer until heated through.
6. Serve over hot rice and garnish with more green onions or sesame seeds if desired.
Notes
Use chicken thighs for extra juiciness.
