Ingredients
1 lb chicken breast
3 tbsp chili oil with garlic
2 medium zucchini
8 oz fettuccine or linguine pasta
1 cup heavy cream
1 cup grated parmesan cheese
2 tsp Cajun seasoning
2 tbsp butter
1 tbsp olive oil
3 garlic cloves, minced
to taste salt
to taste black pepper
Instructions
1. Cut the chicken breast into bite-sized pieces and season with salt, pepper, and 1 tbsp of chili oil.
2. Heat a skillet over medium-high and sear the chicken in 2 tbsp chili oil until golden and crispy. Set aside.
3. Spiralize or thinly slice the zucchini and quickly char in a hot dry skillet until lightly browned. Set aside.
4. Boil pasta in salted water until al dente. Reserve 1 cup of pasta water before draining.
5. In a clean pan, melt butter with olive oil and sauté minced garlic until fragrant.
6. Add heavy cream and Cajun seasoning, stir, and let simmer until thickened.
7. Stir in parmesan cheese until melted, adjusting thickness with pasta water if needed.
8. Toss the cooked pasta in the sauce until coated evenly.
9. Fold in charred zucchini gently to avoid over-mixing.
10. Plate the pasta and zucchini, then top with garlic chili oil chicken bites. Drizzle with extra chili oil if desired.
