Description
Tender boneless chicken breasts slow-cooked in a flavorful garlic-lemon sauce with briny capers and a silky butter finish. This easy crockpot version of Chicken Piccata delivers a gourmet-level meal with minimal effort—perfect over pasta, rice, or potatoes.
Ingredients
4 boneless, skinless chicken breasts
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup all-purpose flour
2 tablespoons olive oil
4 cloves garlic, minced
1 cup chicken broth
1/4 cup fresh lemon juice
1/4 cup capers, drained
1/2 teaspoon crushed red pepper flakes (optional)
2 tablespoons unsalted butter
2 tablespoons chopped fresh parsley
Instructions
1. Pat the chicken dry and season with salt and pepper. Dredge in flour.
2. Sear the chicken in olive oil until golden, then transfer to the crockpot.
3. In the same skillet, sauté garlic until fragrant, then add broth and lemon juice.
4. Stir in capers and red pepper flakes, and pour mixture over the chicken.
5. Cook on low for 4 hours, or until chicken is tender and fully cooked.
6. Add butter and stir until melted into the sauce.
7. Garnish with parsley and serve over your choice of side.
Notes
Use chicken thighs for a juicier option.
Searing adds flavor but can be skipped if needed.
For a thicker sauce, stir in cornstarch slurry in the final 30 minutes.
