Description

Garlic-Parmesan Chicken Bites with Sun-Dried Tomato Cajun Alfredo & Charred Broccolini is a bold, creamy, and crispy chicken dinner recipe packed with flavor. Perfect for weeknight meals or dinner parties, this dish combines Cajun-spiced Alfredo sauce, golden garlic-Parmesan chicken, and smoky broccolini. Ingredients

400g chicken thighs

1 tsp garlic powder

50g grated Parmesan cheese

100g breadcrumbs

2 eggs

2 tbsp olive oil

2 tbsp butter

1 cup heavy cream

1/3 cup chopped sun-dried tomatoes

1 tbsp Cajun seasoning

2 cloves garlic, minced

50g Parmesan cheese (for the sauce)

1 bunch broccolini

1 tsp salt

1/2 tsp black pepper


Instructions

1. Cut chicken thighs into bite-sized pieces.

2. In one bowl, whisk eggs. In another bowl, mix breadcrumbs, garlic powder, grated Parmesan, salt, and pepper.

3. Dip chicken pieces in the egg mixture, then coat them in the breadcrumb mixture.

4. Heat olive oil and 1 tbsp butter in a skillet over medium heat. Fry chicken bites in batches until golden and crispy. Set aside.

5. In another pan, melt 1 tbsp butter. Add garlic, sun-dried tomatoes, and Cajun seasoning. Stir for 1 minute.

6. Pour in heavy cream and bring to a gentle simmer. Add Parmesan cheese and stir until melted and smooth.

7. Heat olive oil in a hot skillet. Add broccolini and let it char for 2–3 minutes. Flip and cook until tender. Season with salt.

8. Serve chicken bites with Cajun Alfredo sauce and charred broccolini. Garnish with extra Parmesan if desired.

Notes

Use chicken thighs for juicier bites.

Avoid overcrowding the skillet to keep chicken crispy.

Reheat sauce gently to prevent separation.
