Ingredients
1 sleeve saltine crackers (about 36 crackers)
2 medium ripe tomatoes, diced
1/2 cup mayonnaise
2 hard-boiled eggs, chopped
1/4 cup green onions, finely chopped
1/2 teaspoon black pepper
Salt to taste
Instructions
1. Break the saltines into bite-sized chunks by hand. Avoid crushing them too fine.
2. In a large mixing bowl, combine the chopped tomatoes, eggs, green onions, and mayonnaise. Mix until coated.
3. Gently fold in the crushed saltines. Be quick to preserve their crunch.
4. Season with black pepper and salt to taste.
