Description

Georgia Cracker Salad is a creamy, tangy Southern staple made with crushed saltines, juicy tomatoes, hard-boiled eggs, green onions, and mayonnaise. It’s the perfect no-cook dish for hot summer days—simple, nostalgic, and full of flavor.


Ingredients

1 sleeve saltine crackers (about 36 crackers)

2 medium ripe tomatoes, diced

1/2 cup mayonnaise

2 hard-boiled eggs, chopped

1/4 cup green onions, finely chopped

1/2 teaspoon black pepper

Salt to taste


Instructions

1. Break the saltines into bite-sized chunks by hand. Avoid crushing them too fine.

2. In a large mixing bowl, combine the chopped tomatoes, eggs, green onions, and mayonnaise. Mix until coated.

3. Gently fold in the crushed saltines. Be quick to preserve their crunch.

4. Season with black pepper and salt to taste.

5. Serve immediately or chill for up to 10 minutes before serving.

Notes

For maximum crunch, mix in the crackers just before serving.

Use Duke’s mayonnaise for an authentic Southern flavor.
