German Cinnamon Stars (Zimtsterne) are classic German Christmas cookies made with whipped egg whites, almond flour, and a touch of cinnamon. Chewy on the inside with a crisp meringue top, these naturally gluten-free cookies are beautiful, festive, and full of warm holiday flavor.
Ingredients
2 large egg whites
1 pinch salt
1 1/2 cups powdered sugar
2 teaspoons ground cinnamon
2 1/2 cups almond flour
1 teaspoon vanilla extract
1/2 teaspoon almond extract (optional)
Instructions
1. In a clean, dry bowl, beat the egg whites and salt until soft peaks form.
2. Gradually add the powdered sugar and continue beating until stiff and glossy.
3. Set aside 1/4 cup of the meringue mixture for glazing.
4. Gently fold in cinnamon, vanilla, almond extract (if using), and almond flour to form a soft dough.
5. Lightly dust your surface with powdered sugar and roll the dough to 1/4-inch thickness.
6. Use a star-shaped cutter to cut cookies, dipping the cutter in powdered sugar to prevent sticking.
7. Place cookies on parchment-lined baking sheets and glaze each with the reserved meringue.
8. Bake at 250°F (120°C) for 25 minutes, keeping the glaze white and dry, not browned.
9. Cool completely before serving or storing.
Notes
Use almond flour for a consistent, smooth dough.
Avoid overbaking to keep the glaze from browning.
Cookies taste better after resting for a day as flavors deepen.
