Ingredients
450g chicken thighs
200g Greek yogurt
2 tsp garam masala
1 tsp ground cumin
1 tsp ground coriander
3 cloves fresh garlic, minced
1 tbsp fresh ginger, grated
250g tomato puree
150ml heavy cream
1 large onion, diced
15g fresh cilantro, chopped
Instructions
1. Combine Greek yogurt, garam masala, cumin, coriander, garlic, and ginger in a bowl. Add chicken thighs (cut into bite-sized pieces) and marinate at least 1 hour or overnight.
2. Preheat grill pan or skillet over medium-high heat. Remove chicken from marinade, sear until charred and about 80% cooked. Set aside.
3. In a large saucepan, sauté onion in oil until softened. Add garlic, ginger, cumin, and coriander; cook until fragrant.
4. Stir in tomato puree, simmer until reduced slightly. Season with salt.
5. Add chicken pieces, simmer until fully cooked.
6. Lower heat, stir in heavy cream until sauce is silky.
7. Garnish with chopped cilantro, serve with basmati rice or naan.
Notes
Chicken thighs stay juicier than breast during cooking.
Overnight marination gives the best flavor penetration.
Add chili powder for extra heat if desired.
