Description

Juicy, herb-marinated chicken paired with fresh vegetables and a tangy yogurt sauce—Greek Chicken Delight is your new go-to for an easy, Mediterranean-style dinner. It’s vibrant, satisfying, and perfect for meal prep or family-style serving.


Ingredients

1.5 lbs boneless skinless chicken thighs (or breasts)

3 tablespoons olive oil

1 lemon, juiced

1 tablespoon red wine vinegar

3 cloves garlic, minced

1 teaspoon dried oregano

0.5 teaspoon dried thyme

0.5 teaspoon ground cumin

0.5 teaspoon salt

0.25 teaspoon black pepper

0.25 teaspoon crushed red pepper flakes (optional)

0.33 cup plain Greek yogurt

1 tablespoon fresh dill, chopped

1 teaspoon lemon zest

1 cup cherry tomatoes, halved

1 small cucumber, sliced

0.25 red onion, thinly sliced

Pita bread or cooked orzo, for serving


Instructions

1. In a medium bowl, whisk together olive oil, lemon juice, vinegar, garlic, oregano, thyme, cumin, salt, pepper, and red pepper flakes. Add the chicken and coat evenly. Cover and marinate in the refrigerator for at least 30 minutes, preferably 2–4 hours.

2. Heat a grill pan or skillet over medium-high heat. Cook the marinated chicken for about 5–6 minutes per side, or until nicely browned and cooked through. Let rest for a few minutes, then slice.

3. In a small bowl, mix the Greek yogurt with chopped dill and lemon zest. Set aside for drizzling.

4. Layer sliced chicken with cherry tomatoes, cucumbers, and red onion over orzo, salad greens, or warm pita. Drizzle with yogurt sauce and serve.

Notes

Marinate longer for deeper flavor—up to 24 hours.

Slice chicken after resting to keep it juicy.

Add feta, olives, or roasted red peppers for more Mediterranean flair.
