Ingredients
1 lb boneless skinless chicken thighs
2 tbsp olive oil
1 lemon juice
2 garlic cloves minced
1 tsp dried oregano
1 tsp red wine vinegar
salt and pepper to taste
2 cups cherry tomatoes halved
1 cucumber diced
0.5 red onion thinly sliced
0.5 cup kalamata olives
0.5 cup crumbled feta cheese
2 cups cooked quinoa or couscous (optional)
2 cups mixed greens or chopped romaine
1 cup tzatziki sauce
fresh dill and lemon wedges for garnish
Instructions
1. In a bowl or zip-top bag, combine olive oil, lemon juice, garlic, oregano, red wine vinegar, salt, and pepper. Add chicken and marinate for at least 30 minutes, ideally 2-4 hours.
2. Heat a grill or skillet over medium-high heat. Cook the chicken 6-7 minutes per side until golden and cooked through. Let rest 5 minutes, then slice.
3. While chicken cooks, prep your vegetables and cook grains if using.
4. Assemble bowls with greens or grains as the base. Top with chicken, veggies, olives, and feta. Add a generous spoonful of tzatziki.
5. Garnish with dill and lemon wedges. Serve immediately or store for meal prep.
