Description
These Greek Yogurt Marinated Chicken Breasts are tender, juicy, and full of bright Mediterranean flavors. The creamy yogurt marinade works magic to tenderize the meat, while garlic, lemon, and herbs bring bold flavor. A perfect healthy dinner for grilling, baking, or pan-searing.
Ingredients
1 cup Greek yogurt
2 tablespoons olive oil
3 cloves garlic, minced
1 tablespoon lemon juice
1 teaspoon lemon zest
1 teaspoon dried oregano
1 teaspoon paprika
1/2 teaspoon ground cumin
1 teaspoon salt
1/2 teaspoon black pepper
4 chicken breasts, boneless and skinless
Instructions
1. In a large bowl, whisk together the Greek yogurt, olive oil, garlic, lemon juice, zest, oregano, paprika, cumin, salt, and black pepper until smooth and well combined.
2. Add the chicken breasts to the bowl and toss to coat thoroughly. Cover and refrigerate for at least 1 hour or up to overnight.
3. Remove the chicken from the marinade and shake off excess.
4. To grill: Preheat grill to medium-high and cook chicken for 6-7 minutes per side, until internal temperature reaches 165°F.
5. To bake: Preheat oven to 400°F and bake on a lined baking sheet for 22-25 minutes.
6. To pan-sear: Heat a tablespoon of oil in a skillet over medium heat and cook for 6-8 minutes per side.
7. Let the cooked chicken rest for 5 minutes before slicing.
8. Serve with lemon wedges, herbs, or Mediterranean sides.
Notes
Marinate at least 1 hour for best flavor—overnight is even better.
Use full-fat yogurt for a richer marinade and juicier chicken.
