Description
These grilled BBQ boneless chicken thighs are juicy, smoky, and loaded with flavor from a savory-sweet marinade and your favorite BBQ sauce. Perfect for summer cookouts, family dinners, or meal prep.
Ingredients
2 pounds boneless, skinless chicken thighs
1/4 cup olive oil
2 tablespoons brown sugar
1 tablespoon smoked paprika
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon chili powder
1 cup BBQ sauce
Instructions
1. In a large bowl, whisk together olive oil, brown sugar, smoked paprika, garlic powder, onion powder, salt, pepper, and chili powder (if using).
2. Add chicken thighs and toss to coat evenly. Cover and refrigerate for at least 30 minutes or up to 8 hours.
3. Preheat grill to medium-high heat (around 400°F). Clean and oil the grates.
4. Place chicken thighs on grill and cook for 5-6 minutes per side. Brush with BBQ sauce after flipping.
5. During the last few minutes of grilling, brush other side with more sauce.
6. Remove when internal temperature hits 165°F. Let rest 5 minutes.
7. Serve warm with additional BBQ sauce if desired.
Notes
Marinate longer for deeper flavor—up to 8 hours is ideal.
Use a meat thermometer to avoid overcooking.
For spicier flavor, use chipotle BBQ sauce or add cayenne to the rub.
