Description
This grilled shrimp bowl with avocado, corn salsa & creamy sauce is the perfect summer dinner. A flavorful, healthy shrimp recipe packed with fresh vegetables, zesty lime, and a creamy drizzle. Ideal for grilling season or weeknight meals.
Ingredients
1 lb shrimp, peeled and deveined
2 tbsp olive oil
2 tbsp lime juice
1 garlic clove, minced
1 tsp cumin
1 tsp paprika
1/2 tsp chili powder
1/4 tsp salt
1/4 tsp black pepper
2 ears corn, grilled and kernels removed
1 cup cherry tomatoes, diced
1/4 cup red onion, finely chopped
1/4 cup cilantro, chopped
1 avocado, sliced
1/3 cup sour cream or Greek yogurt
1 tbsp lime juice (for sauce)
1 small garlic clove, minced (for sauce)
1 pinch salt (for sauce)
2 cups cooked rice or salad greens (base)
Instructions
1. In a bowl, mix olive oil, lime juice, garlic, cumin, paprika, chili powder, salt, and pepper. Add shrimp and marinate for 10 minutes.
2. Preheat grill or grill pan. Skewer shrimp and grill for 2 minutes per side until opaque and charred. Grill corn until blackened and remove kernels.
3. Mix grilled corn, cherry tomatoes, red onion, cilantro, and lime juice in a bowl. Season with salt to make the salsa.
4. Stir together sour cream or Greek yogurt, lime juice, garlic, and salt to make the creamy sauce.
5. In a bowl, layer rice or greens, shrimp, corn salsa, and avocado slices. Drizzle creamy sauce over the top and garnish with extra lime or cilantro.
Notes
Use fresh or frozen shrimp (thawed).
Grill corn for a smoky, sweet flavor.
Slice avocado just before serving to keep it from browning.
