Ingredients

1 lb flank steak

2 medium zucchini

2 tbsp olive oil

1 tsp salt

1 tsp black pepper

1 tsp garlic powder

1/2 cup Greek yogurt

1/4 cup mayonnaise

1 tbsp lemon juice

2 tbsp chopped fresh parsley

2 cups cooked rice or grain of choice

1 cup cherry tomatoes

1/2 red onion


Instructions

1. Pat the steak dry and season it with salt, black pepper, and garlic powder. Let it rest at room temperature.

2. In a bowl, combine Greek yogurt, mayonnaise, lemon juice, minced garlic, and parsley. Mix and refrigerate.

3. Slice zucchini, brush with olive oil, sprinkle with salt, and grill 3 minutes per side until tender with grill marks.

4. Grill the steak over high heat for 4–5 minutes per side. Let it rest for 5–10 minutes, then slice thinly against the grain.

5. Assemble bowls with rice, steak slices, grilled zucchini, cherry tomatoes, and red onion. Drizzle sauce over top and garnish with parsley.
