Description

This Ground Beef Sweet Potato Power Bowl is a healthy, protein-packed dinner featuring roasted sweet potatoes, spiced ground beef, and fresh toppings like avocado and lime. Perfect for meal prep or weeknight meals, it’s gluten-free, flexible, and incredibly flavorful.


Ingredients

2 medium sweet potatoes

1 tablespoon olive oil

1 pound ground beef (85% lean)

1 small red onion, chopped

2 cloves garlic, minced

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper to taste

1 avocado, sliced

1 cup shredded cabbage or slaw mix

1 lime, cut into wedges

1/2 cup Greek yogurt or sour cream (optional)


Instructions

1. Preheat oven to 425°F. Toss cubed sweet potatoes with olive oil, salt, and pepper. Roast on a baking sheet for 25–30 minutes, flipping halfway through.

2. In a skillet over medium heat, sauté red onion in olive oil until soft. Add garlic and cook for 1 more minute.

3. Add ground beef to the skillet, breaking it apart as it cooks. Season with cumin, paprika, salt, and pepper. Cook until browned and fully cooked, about 7–10 minutes.

4. While cooking, prepare toppings: slice avocado, shred cabbage, cut lime into wedges. If using, mix Greek yogurt or sour cream with a bit of lime juice.

5. Assemble bowls: layer roasted sweet potatoes, beef, cabbage, avocado, and creamy drizzle. Finish with fresh lime juice.

Notes

Keep sweet potatoes spread out on the baking sheet for proper roasting.

Don’t overcook the beef—just brown it to keep it juicy.

Add toppings like black beans, spicy ranch, or hot sauce for extra flavor.
