Description
Halloween Eyeball Jello Shots are a spooky, fruity party treat made with lime gelatin, vodka, and lychee-blueberry “eyeballs” for a creepy Halloween finish.
Ingredients
1 cup boiling water
1 package lime gelatin, 3 ounces
1/2 cup cold water
1/2 cup vodka
12 to 16 lychee fruits, drained
12 to 16 blueberries
Red decorating gel, optional
Instructions
1. Pour the boiling water into a mixing bowl and whisk in the lime gelatin until fully dissolved.
2. Stir in the cold water and vodka until evenly combined.
3. Pour the mixture into 12 to 16 small shot cups, filling each about three-quarters full.
4. Refrigerate for 45 minutes to 1 hour, until slightly thickened.
5. Press one blueberry into each lychee fruit to create the eyeballs.
6. Gently place one lychee eyeball into each partially set jello shot.
7. Add red decorating gel around the lychee if you want a bloodshot effect.
8. Refrigerate for 2 to 3 hours more, until fully set.
9. Serve cold.
Notes
Let the jello cool and thicken slightly before adding the lychee eyeballs so they do not sink.
Use plain or lightly sweetened lychee for the best eyeball appearance and flavor balance.
Keep the shots chilled until serving so they stay firm and look their best on the party table.
