Description

Ingredients

1 tablespoon olive oil

1 medium yellow onion, diced

3 cloves garlic, minced

3 medium carrots, sliced

3 celery stalks, sliced

1 small green cabbage, chopped

1 green bell pepper, chopped

1 can (14.5 ounces) diced tomatoes

6 cups low-sodium vegetable broth

1 tablespoon tomato paste

1 teaspoon Italian seasoning

1 teaspoon paprika

1/2 teaspoon black pepper

1 teaspoon salt

2 cups green beans, trimmed and cut

2 medium zucchini, chopped

2 tablespoons chopped fresh parsley

1 tablespoon lemon juice


Instructions

1. Heat the olive oil in a large soup pot over medium heat. Add the onion, carrots, and celery, then cook for 5 to 6 minutes until softened.

2. Stir in the garlic and cook for 30 seconds until fragrant.

3. Add the cabbage, bell pepper, green beans, and zucchini. Stir to combine.

4. Pour in the diced tomatoes, vegetable broth, and tomato paste. Stir well until the tomato paste dissolves.

5. Add the Italian seasoning, paprika, black pepper, and salt.

6. Bring the soup to a gentle boil, then reduce the heat and simmer for 25 to 30 minutes, until the vegetables are tender.

7. Stir in the parsley and lemon juice. Taste and adjust seasoning if needed.

8. Serve hot.

Notes

Use low-sodium broth so you can control the salt level more easily.

For a firmer texture, add the zucchini during the last 10 minutes of cooking.

This soup tastes even better the next day after the flavors have blended.
