Description
These Healthy Nut & Seed Energy Cookies are naturally sweetened, packed with oats, seeds, and dried fruit. Perfect for breakfast, snack time, or post-workout fuel. Gluten-free, dairy-free, and easily adaptable.
Ingredients
1 cup rolled oats
1/2 cup almond flour
1/4 cup ground flaxseed
1/4 cup chia seeds
1/4 cup sunflower seeds
1/4 cup pumpkin seeds
1/3 cup chopped almonds
1/3 cup chopped walnuts
1/3 cup dried cranberries
1/4 cup maple syrup
1/3 cup unsweetened applesauce
1/4 cup coconut oil
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 teaspoon vanilla extract
Instructions
1. In a large bowl, mix oats, almond flour, flaxseed, chia seeds, sunflower seeds, pumpkin seeds, almonds, walnuts, dried cranberries, cinnamon, and salt.
2. Add maple syrup, applesauce, melted coconut oil, and vanilla extract. Stir well until fully combined.
3. Scoop about 2 tablespoons of dough, roll into balls, flatten, and place on a parchment-lined baking sheet.
4. Bake at 350°F (175°C) for 15–18 minutes until golden on edges.
5. Cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Use certified gluten-free oats to keep this recipe gluten-free.
You can swap maple syrup with honey if not vegan.
Store in an airtight container for 5 days or freeze up to 3 months.
