Description
A creamy, zesty dip loaded with herbs and spinach, perfect for parties or as a chilled snack. This Herbed Spinach Dip is rich, refreshing, and pairs beautifully with veggies or crackers.
Ingredients
1 tablespoon olive oil
2 garlic cloves, minced
6 ounces fresh baby spinach (or 10 ounces frozen, thawed and drained)
8 ounces cream cheese, softened
1/2 cup sour cream
1/4 cup mayonnaise
1/4 cup chopped fresh parsley
2 tablespoons chopped fresh dill
2 tablespoons chopped chives
1 teaspoon lemon zest
1 tablespoon lemon juice
1/4 teaspoon salt
1/4 teaspoon black pepper
Optional: crushed red pepper flakes
Instructions
1. Heat olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
2. Add the spinach and cook until wilted (or warmed through if using frozen). Let cool, then squeeze out excess moisture.
3. In a mixing bowl, combine cream cheese, sour cream, and mayonnaise. Mix until smooth and fluffy.
4. Fold in parsley, dill, chives, lemon zest, lemon juice, salt, pepper, and red pepper flakes if using. Stir in spinach.
5. Cover and chill for at least 1 hour before serving.
6. Serve with crackers, pita chips, or fresh vegetables.
Notes
Be sure to fully drain the spinach to keep the dip from getting watery.
You can swap sour cream with Greek yogurt for a protein boost.
Let the dip chill for an hour or more for best flavor development.
