Ingredients
1 lb chicken breast
12 oz pasta (penne or rotini)
1 packet Hidden Valley Ranch seasoning mix
4 oz cream cheese
1 cup shredded cheddar cheese
1 cup milk
1 tbsp olive oil
Salt and pepper to taste
Instructions
1. Boil a large pot of salted water and cook pasta according to package directions. Drain and set aside.
2. Heat olive oil in a skillet over medium heat. Add diced chicken, season with salt and pepper, and cook until golden and no longer pink.
3. Reduce heat to low and stir in cream cheese until melted.
4. Pour in milk, stirring until a creamy sauce forms.
5. Add ranch seasoning mix and stir well to combine. Let it simmer to thicken.
6. Add cooked pasta to the skillet and toss to coat. Stir in shredded cheddar cheese and allow to melt.
7. Serve immediately, garnished with extra cheese or parsley if desired.
Notes
Use rotini or penne for the best sauce cling.
Don’t add ranch mix until the sauce base is formed.
Add a splash of milk when reheating to maintain creaminess.
