Ingredients
1 lb ground beef
4 medium russet potatoes, thinly sliced
1 medium onion, finely chopped
1 can (10.5 oz) cream of mushroom soup
0.5 cup milk
1 cup shredded cheddar cheese (optional, for topping)
Salt and pepper to taste
1 tsp garlic powder
0.5 tsp smoked paprika
Nonstick cooking spray or butter (for greasing)
Instructions
1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
2. In a skillet, cook the ground beef over medium heat until browned. Add onion and sauté 2–3 minutes. Season with salt, pepper, garlic powder, and paprika.
3. In a bowl, whisk together the cream of mushroom soup and milk.
4. Layer half the potato slices in the dish, followed by half the beef mixture and half the soup mixture. Repeat with the remaining layers.
5. Cover with foil and bake for 45 minutes.
6. Remove foil, add cheese if using, and bake uncovered for 15 minutes or until the potatoes are tender and cheese is bubbly.
Notes
For extra creaminess, use Yukon Gold potatoes.
Add veggies like peas or carrots to boost the nutrition.
To make it ahead, assemble and refrigerate up to 24 hours before baking.
