Description

Crispy on the outside, fluffy on the inside—these Homemade Buttery Roasted Potatoes are the perfect savory side dish. Coated in garlic butter and roasted until golden, they complement everything from Sunday roasts to casual weeknight dinners.


Ingredients

2 pounds Yukon Gold or Russet potatoes, peeled and cut into chunks

4 tablespoons unsalted butter, melted

2 tablespoons olive oil

4 garlic cloves, minced

1 teaspoon salt

0.5 teaspoon black pepper

1 teaspoon dried thyme or rosemary

2 tablespoons chopped fresh parsley (optional)


Instructions

1. Peel and chop the potatoes into evenly sized chunks. Place them in a large pot, cover with cold water, and bring to a boil. Cook for about 8 minutes, just until the edges start to soften. Drain and let them steam dry in the colander.

2. Preheat your oven to 425°F (220°C). In a large bowl, combine the melted butter, olive oil, minced garlic, salt, pepper, and herbs. Add the warm potatoes and gently toss to coat.

3. Spread the potatoes on a parchment-lined baking sheet in a single layer. Roast for 35–45 minutes, turning once halfway through, until golden brown and crisp on the edges.

4. Remove from the oven and sprinkle with chopped fresh parsley, if using. Serve immediately while hot and crispy.

Notes

Use Yukon Gold for a naturally buttery flavor or Russets for a fluffier inside.

Make sure potatoes are dry before roasting for the crispiest texture.

You can toss in Parmesan during the last 10 minutes of baking for added flavor.
