Description

Creamy, garlicky, and loaded with bold umami flavor, this Homemade Caesar Dressing is a quick and delicious way to elevate your salads, sandwiches, and more.


Ingredients

2 egg yolks

2 teaspoons Dijon mustard

2 tablespoons fresh lemon juice

2 teaspoons Worcestershire sauce

2 cloves garlic, minced

4 anchovy fillets, minced

½ cup grated Parmesan cheese

½ cup olive oil

Salt and freshly ground black pepper, to taste


Instructions

1. In a medium bowl, whisk together egg yolks, Dijon mustard, lemon juice, Worcestershire sauce, minced garlic, and anchovies until smooth.

2. Slowly drizzle in the olive oil while whisking constantly to emulsify.

3. Stir in grated Parmesan cheese until fully combined.

4. Season with salt and pepper to taste.

5. Chill for at least 30 minutes before serving.

Notes

For a safer version, substitute with pasteurized yolks or 3 tbsp mayo.

Anchovy paste can replace fillets (use 1 to 1½ tsp).
