This hearty Homemade Cheeseburger Soup with Baby Potatoes blends all the flavors of a cheeseburger into a creamy, comforting soup. Featuring ground beef, cheddar, and tender baby potatoes, it’s an easy, one-pot meal perfect for cold nights or make-ahead lunches.
Ingredients
1 lb ground beef
1 tbsp olive oil
1 small onion, finely chopped
2 cloves garlic, minced
3 cups baby potatoes, halved or quartered
2 cups chicken or beef broth
1.5 cups milk
1 cup shredded sharp cheddar cheese
0.5 cup sour cream
1 tbsp Worcestershire sauce
Salt and black pepper to taste
0.5 tsp smoked paprika (optional)
Chopped chives or green onions for garnish (optional)
Instructions
1. Brown the ground beef over medium heat in a large pot. Drain excess grease and set beef aside.
2. Add olive oil to the pot if needed and sauté onion until translucent, about 3–4 minutes. Add garlic and cook 1 more minute.
3. Stir in baby potatoes and broth. Bring to a boil, reduce heat, and simmer for 10–12 minutes until potatoes are tender.
4. Return beef to the pot. Add milk, sour cream, Worcestershire sauce, and cheddar. Stir over low heat until cheese is melted.
5. Season with salt, pepper, and smoked paprika if using. Serve hot, garnished with chives or green onions.
Notes
For a thicker texture, mash a few potatoes directly in the pot before adding cheese.
Add bacon, jalapeños, or hot sauce for extra flavor.
Freezes best if cheese and sour cream are added after reheating.
