Ingredients
2 pounds boneless, skinless chicken thighs
1/2 cup honey
1/2 cup low-sodium soy sauce
1/4 cup ketchup
2 tablespoons rice vinegar
1 tablespoon sesame oil
5 garlic cloves, minced
1/2 teaspoon crushed red pepper flakes (optional)
2 tablespoons cornstarch
2 tablespoons water
Sliced green onions, for garnish
Sesame seeds, for garnish
Instructions
1. In a bowl, whisk together the honey, soy sauce, ketchup, rice vinegar, sesame oil, garlic, and red pepper flakes.
2. Place the chicken thighs in your slow cooker and pour the sauce over them. Stir gently to coat.
3. Cover and cook on low for 6 hours or high for 3 to 4 hours until the chicken is tender.
4. Remove the chicken and set aside. Whisk the cornstarch and water in a small bowl to make a slurry.
5. Add the slurry to the sauce in the Crock Pot, turn to high, and cook uncovered for 10–15 minutes until thickened.
6. Shred the chicken and return it to the sauce. Stir well to coat.
7. Garnish with green onions and sesame seeds. Serve hot over rice or noodles.
Notes
Use boneless chicken thighs for maximum tenderness.
Skip red pepper flakes if you prefer it mild.
Double the sauce if serving over rice to soak up more flavor.
